Fujian Bai Mu Dan
A distant (geographically) cousin to our White Peony, this 2024 top-shelf white tea is from the Fujian province, cleanly grown and highly appreciated by tea connoisseurs the world over. Sweet and fruity, this white tea is full-flavored and seemingly more potent than other white tea and has a soft floral finish. Aromatically, it is herbaceous, with hints of earthiness and bread dough. We enjoy this tea gong fu brewed as well as Western style, using longer steeps.
The buds and leaves are multi-colored, like autumn foliage and yield an apricot colored brew without astringency or grassy flavor.

Basic Brewing Instructions:
Loose, white tea may be given a 10 second rinse with the same temperature water as used for brewing.
175˚ to 185º F water temperature.
Use 1 heaping Tbsp. per 8oz. of filtered water
Recommended first steeping of 1-3 minutes. Add 1-2 minutes for each subsequent infusion up to 10 minutes.
